I would to choose the order of the displayed modules on the LMS but right now it is in alphabetical order according to the module's title.

Oh, you mean the order of the courses then? The courses displayed in "My Courses" page
There's a setting in the general settings > elearning.
You can sort by name, by state or by course code

administration>settings>system configuration>settings
then choose "elearning" from the dropdown menu

Great ! Trank you. Is it possible to display the modules locked and unlock them one by one when the learner has finished the course ?

That is a different thing. To do that you should use Curricula, not courses. Just take a look at that section and you'll see how it works.
Please note that prerequisites in Curricula are bugged in version 2.1, they work correctly in Forma 2.2
